What I love about Wind Dancer is that Lisa and Jim strive for a zero-input system that can work in California, while providing the best lives for all their heritage animals. They use best practices along every axis and the result is a variety of delicious, humanely produced meats.

I am a picky eater and compared meat, especially pork from different farms and Wind Dancer is the ultimate winner, especially their Berkshire hogs -- it's so juicy and full of flavor. My advice on cooking them: use as little seasonings as possible, make it simple and enjoy the flavor of the meat, not the seasonings. Have to mention the stock from the Berkshire pork bones: having a pot of soup simmering on the stovetop in a cozy winter afternoon is simple happiness.
I went to visit the farm on a sunny day and Lisa gave me a lovely tour around the farm. Greeted the hogs and goats, met the sheep/lambs, the cows, and saw the turkeys put up the show... love it! Really appreciate Lisa's effort to provide us with tasty and wholesome meat.

I am sending you a photo of a blanket made mostly from your lambs’ wool. As for your meats, we have eaten no other for several years now. We create simple meals such as chard with sausage (any one of your pork or lamb sausages); squash soup with a side of those yummy Thai flavored sausages. Bratwurst with steamed vegetables in season. Or a big pot of vegetable soup with some bite-sized bits of andouille sausage. We love the pork chops, the bacon, the ground lamb (make lovely patties).

Delicious lamb sausage bought at the Walnut Creek farmers market. I wanted to make sure to cook it just right and sent a message through Facebook and got a response right away. So good and flavorful! Enjoyed with Swiss chard and sourdough bread and butter.
